The average charcoal chimney for a built in charcoal grill is about 8 inches in diameter. It is a hallow cylindrical metal device that has a handle on the side and a metal grate in the middle to hold the charcoal. The bottom of the tube has holes where you can safely and conveniently light a fire.
The first step you should do in preparing your built in charcoal grill is to fill the charcoal chimney with charcoal. Avoid over-filling it; just fill it up to the edge of the rim. Then crumple up some newspapers and place them on the bottom of the tube. Remember that you need oxygen for fire, so you wouldn’t want to cram the bottom with paper. Now light the newspaper with long fireplace matches using the holes in the bottom of the tube. Then all you have to do is wait. The fire will ignite the charcoal briquettes at the lower bottom of the cylinder and work its way up. You will know when the coals are ready when you notice that small flames are visible at the top of the charcoal chimney. When this happens, pour the coals over the grate of your built in charcoal grill.
A charcoal chimney is very convenient for a built in charcoal grill. It ignites all the charcoal in about 10-15 minutes. It is also healthier since it does not require any sort of chemical liquid starters and it comes with safety features. More importantly, it is reusable and will last for a very long time.
When using a built in charcoal grill, the most important part of the process is preparing the coals correctly at the fastest possible time. You have to make sure that the coals are at their maximum temperature before you start grilling. This is the only way to have control over the temperature. With a charcoal chimney at your disposal, you can be assured that your meals will be grilled to perfection.
